MOM'S STUFFING


1 ROLL SAUSAGE MEAT (JONES)
1 ONION
1 ½  LOAVES OF BREAD
1 TSP THYME
4 EGGS
½ TSP SALT
1 TBS GARLIC
¼ TSP PEPPER
1 TBS OREGANO

IN A SKILLET, OR ELECTRIC FRYING PAN, COOK SAUSAGE,  FLATTENING IT.  COOK
UNTIL IT IS STILL A LITTLE PINK.

CUT UP THE ONION.  COOK IT A LITTLE TOO, YOU DO NOT WANT IT BROWN.

LIGHTLY DAMPEN BREAD BY RUNNING IT THROUGH RUNNING WATER.  DO NOT
SOAK IT.

PUT BREAD IN A LARGE MIXING BOWL.  ADD EGGS, SPICES, COOKED SAUSAGE
MEAT AND ONION.

MIX WELL

PUT MIXED STUFFIN
G IN THE FRYING PAN AND COOK IT A LITTLE.

STUFFING CAN BE DONE A COUPLE OF DAYS AHEAD.  DO NOT STUFF IN THE
TURKEY UNTIL YOU ARE READY TO COOK THE TURKEY.

WHEN MAKING STUFFING THAT WILL NOT BE STUFFED INSIDE A TURKEY, POUR
CHICKEN BROTH ON TOP OF
STUFFING WHILE COOING TO KEEP MOIST.  ALSO USE TURKEY DRIPPINGS
