THE TURKEY
Butter up the Turkey, after Steven's cleaned it. Sprinkle with salt, pepper, and sage. Put gizzards in a pot with water, bouillon, and onion. Cook gizzards on low temp as long as turkey cooks, add water as needed. Baste Turkey every ½ hour.
THE GRAVY
Use the water that the gizzards was cooking in for gravy. Add a very small amount of the drippings from the turkey. Follow basic instructions from wondra can: when the gizzards cook, I start with four cups of water. So when it's time to make the gravy, you will need one cup of water and a ¼ cup of wondra flour. It's easier to work with smaller amounts though. Start with ½ cup water and 4 tbs of wondra. Mix well. Add more flour mixture as needed.

Always thaw in unopened bag. Thaw on tray in refrigerator.
When thawing in cold water, be sure to change water every 30 minutes.
DO NOT THAW AT ROOM TEMP.
*Remove cover last ½-hour of roasting time if further browning is desired. If shiny aluminum roaster is used, it may be
necessary to increase cooking time up to 1 hour.
TEST FOR DONENESS
1. Thigh temperature should be 180-185ºF. If turkey is stuffed, for further testing remove thermometer from thigh and place in
center of stuffing. Temperature should be 160-165ºF.
2. Protecting fingers with paper towel or clothe, press thigh and drumstick. Meat should feel soft.
3. When thigh skin is pierced, juices should no longer be pink.
Directions for cooking giblets
Simmer neck, heart and gizzard in salted water 2-2 ½-hours; add liver last ½-hour. Chop giblets; use in gravy or stuffing.
